Smoked Chicken and Bacon Carbonara
Smoked Chicken and Bacon Carbonara
Ingredients
- 500ml cream
- Approx 100g Parmesan cheese - grated (use more or less depending on how strong you like it)
- 3eggs
- 4 Spring onions - sliced
- 2-3 slices bacon - chopped (optional or double if you are leaving out smoked chicken)
- 1/2 a smoked chicken pull off the flesh and dice (optional - can make with just bacon)
- 1 packet fettuccine - dried or fresh - follow packet instructions to cook
Method
- Boil a large pot of salted water and cook pasta according to instructions on packet
- Heat a little olive oil in a deep pan add bacon and cook gently - don't let it brown too much
- Add the smoked chicken and cook for a couple of minutes
- Place cream and eggs in a bowl and beat to combine
- Take pan off the heat - add the cream and egg mixture, the cheese, spring onion and salt and freshly ground pepper - cook over a gentle heat until cheese is melted and sauce has thickened.
- Drain the pasta (reserve about 1/2 cup water pasta was cooked in before draining) toss back in pan with reserved liquid (this will stop it from sticking together), olive oil and freshly ground pepper.
- Pasta can be stirred through the sauce or sauce can be served on top of the pasta.
- Best served in bowls
